Szechuan Seasoning (Hot)
Szechuan pepper (or Sichuan Pepper) is a spice from the Sichuan cuisine of China's southwestern Sichuan Province. It has a unique aroma and flavor that is neither hot like chili peppers nor pungent like black pepper. Instead, it has slight lemony overtones and creates a tingly numbness in the mouth due to hydroxy-α-sanshool.
This seasoning combines this ingredient with western herbs and spices to create a rub which is perfect for chicken or a tofu stir fry.
Usage:
Rub 6-8 g of Szechuan seasoning on 100g of raw meat, add 8 g of cooking oil. Mix well and set for 30 mins. Then cook the way you like such as fry, stir fry or pan fry.
