Using Szechuan Seasoning

Makes: 2 servings
Ingredients:
2 x 150g chicken thigh fillets
2 - 2.5 x tablespoons Szechuan Seasoning
0.5 x cup all-purpose flour
0.5 x cup potato starch
2 x tablespoons cooking oil
Oil for deep-fat frying
Direction
1. Slice chicken into small bite-size pieces. Add 2 tablespoons of Szechuan Seasoning and 1.5-2 tablespoons of cooking oil. Mix well before allowing it to sit for 15-20 minutes.
2. Coat the marinated chicken with 0.5 cups of all-purpose flour and 0.5 cups of potato starch in a bowl. Add another light sprinkle of Szechuan Seasoning (0.5 tablespoons). Set for another 5-10 minutes.
3. In the deep fryer or pot, heat the oil to 170 degrees Celcius. Add the coated chicken marinate and fry until it is golden.
4. (Optional) if you prefer it extra crispy, you can double fry it. Heat the oil to 180 degrees Celcius after removing the fried chicken. Add the chicken back in and cook until golden brown.
